30-Minute Leftover Turkey or Chicken Soup Recipe

Leftover turkey sandwiches are awesome after Thanksgiving, but sometimes I need something different. What else can you make with leftover turkey? Try this 30-minute leftover turkey or chicken soup recipe! Not only great for leftovers, but great for those cold months and when you’re feeling under the weather. It’s also great to use staples you already have in the house.

30-Minute Leftover Turkey or Chicken Soup Recipe

Chicken or turkey, pasta, vegetables, and seasonings. You can essentially make this recipe with any leftovers and have a delicious meal. You can make this soup in about 30 minutes, give or take.

Cook: 25 minutes

Makes: 6 servings 

Leftover Turkey Soup Ingredients:

2 Lbs. of autumn colored bow tie pasta (you don’t have to have colored pasta, but it’s more cheery!)

1 TBSP olive oil

1/2 medium onion (chopped)

4 garlic cloves (minced)

4 sticks of celery (chopped)

3 large carrots (peeled/sliced)

1 1/2 Lbs. small potatoes (cut in half)

4 cups broth (chicken or vegetable)

2 cups water

Dash of Italian seasonings (4 dashes)

2+ cups cooked turkey or chicken

salt/pepper (to taste)

Leftover Turkey or Chicken Soup Directions

Cook the package of pasta following the directions on the back of the package.

Once cooked, removed from pot and set aside.

Add the olive oil to the soup pot. Heat on medium-high heat.

Saute the onion until it is lightly browned, about 5-7 minutes.

Add the garlic, cooking about 30 seconds. (Or until it is fragrant.)

Carefully add the celery, carrots, small potatoes, broth, water, and Italian seasonings.

How to make leftover turkey soup after Thanksgiving.

Increase the heat to high.

Bring the pot to a gently boil.

Then reduce the heat to a medium-low.

Cover the pot.

Leave the pot lid slightly ajar.

Allow the soup to simmer for 10 minutes.

Add the turkey or chicken.

Add the cooked pasta.

Simmer the soup for another 10 minutes or so.

Add salt and pepper (to taste).

Serve.
